Coriander is excited to host ANDREW BACKLIN of MODALES VINEYARD & WINERY for a special collab with Chef Ali.

Coriander and Modales share a commitment to sustainability and organic growing practices and having a good time while doing it. We feature their Sauvignon Blanc as one of our featured wines and are excited to introduce you to more of Modales’ catalogue.

Andrew is happy to discuss the state of Michigan wine and why he chooses to make wine here instead of California. Chef Ali will discuss her pairing notes and the duo will help you know how to make great pairings at home.

MENU

Amuse bouche: Whipped goat cheese and chive blossom-prosecco jelly with Farm radishes and mint.
Pairing: Modales’ 2022 Es Lo Que Es Pét-Nat

Salad course: Blue crab with raw shaved new asparagus, fennel, preserved lemon, thyme vinaigrette, fried capers, spring greens.
Vegetarian substitution: Served without crab
Pairing: Modales’ 2022 Dry Rose (Cabernet Franc)

Main course: Whole grilled seasonal fish with Coriander Farm herb and lemon spoon sauce. A true showstopper! Served with a pilaf of fire-toasted wheat berries, roasted radish, grilled carrots, Michigan peas and pea shoots.
Vegetarian substitution: Wild mushrooms, french lentil & walnut meatballs with Farm herb and lemon spoon sauce.
Pairing: Modales’ 2021 El Suelo Red Wine Blend

Dessert: House-made lemon thyme & honey ice cream with shortbread-pecan crumble.
Pairing: Modales’ 2020 Riesling (natural fermentation)

About Andrew: Originally from Lake County in Northern California, Andrew worked in wine production under mentor, Jed Steele of Steele Wines as well as with the Duckhorn Portfolio.

After realizing that working for a brand making more than 2 million cases wasn't what he wanted to do, he found himself in Michigan. Andrew helped make the first release of Modales in 2016 and has been leading the direction of winemaking at Modales ever since.  

Working with over 15 grape varieties, such as Riesling, Cabernet Franc, Chardonnay, Pinot Noir, newly planted Gamay, experimental plantings of Petit Manseng & Tannat to name a few, Andrew is steadily pushing the boundaries of what is possible for Michigan wine.
